My first experience with apple cider vinegar happened completely by accident. About fourteen years ago, while in New York, I came across a recipe from a little French man who baked his own breads and made his own wines. He had moved to America in the late ’80s for his children and grandchildren but still lived much like he had in his small village in France.
He shared with me his intricate recipe for peasant’s wine made with wild grapes, and I was determined to try it. I had a large wine crock with a lid that my friend Heather had given me years earlier, so off to the barn I went. The wine turned out beautifully — we drank it, shared it, and loved it. But I made so much that a few gallons sat forgotten in that crock.
More than six years later, while packing to move to Vermont, Chris and I came across that old crock. When we lifted the lid, there was a thick 2½- to 3-inch layer floating on top — and the smell was divine, like the best red wine vinegar you could imagine. Instead of tossing it, we tasted it… and it was extraordinary.
That forgotten batch of wine became the start of my vinegar-making journey. It led to a small business, and eventually, to the creation of Wonderlost Homestead. And here I am today, sharing all my favorite recipes with you — all because of vinegar.
